When you live in Washington, access to fresh tomatoes only comes once per year, but our family loves salsa year-round, so canned tomatoes were always my Mom's go-to during the non-summer months. She has been perfecting this recipe over the years and it is a family favorite. I love how easy it is to make, and requires very few fresh ingredients, which makes it an amazing option for the winter months, but please believe this is good all year round. Do not omit the mint, it is the "secret" ingredient that takes this salsa up a notch.
An easy salsa, using canned tomatoes and a few fresh ingredients. Comes together easily and is great to serve as an appetizer with chips or can so your future self and thank your past self.
1 15 ounce can of tomatoes
1 10 ounce can of roasted tomatoes with chiles
1 clove garlic
1/4 teaspoon dried mint or 1 tablespoon fresh
1/4 teaspoon cumin
1/4 teaspoon Mexican oregano
1/4 teaspoon salt
1/8 teaspoon sugar
1 lime, juice only
1 bunch cilantro (finely chop leaves)
1/2 cup white onion, finely diced
In a blender, add the tomatoes, garlic, mint, cumin, oregano, salt, sugar, lime juice, cilantro stems, and 1/4 cup white onion. Blend until combined. In a serving bowl, add 1/4 cup white onion and remaining chopped cilantro leaves. Pour salsa over cilantro and onion, and mix well. Chill until ready to serve.
