Dad's Grilled Salmon

Growing up in Washington, we patiently waited for the salmon run every year, a big deal in the Pacific Northwest. Though I come from a long line of excellent cooks, my Dad wasn't one of them, but there was one thing my Dad made every year, his Grilled Salmon. My parents would always grab a whole salmon, and my Dad would prepare it on the grill. This simple recipe is a go-to all these years later, and I am excited to share it with you. I hope your family will enjoy it as much as we do.

Dad's Grilled Salmon

A simple salmon recipe that comes together with 5 ingredients and your grill in under 30 minutes.


4.5 lbs wild-caught salmon
1.5 teaspoon salt
1 teaspoon black pepper
1 cube butter, sliced
4 cloves garlic, finely minced
2 lemons, 1/2 slices
1 12oz Mexican lager

Optional: fresh dill


Preheat grill to 375˚. Cover a sheet pan with foil or parchment. Lay salmon on top, skin side down. Season with half of the salt and pepper. Place butter cube slices on top of the salmon, top with minced garlic and lemon slices. Season with remaining salt and pepper. Pour the beer around the salmon and tightly wrap the aluminum or parchment. Make four small slits in the foil or parchment to allow steam to release. Carefully place in the middle of the preheated grill, close the lid, and cook for 15 to 20 minutes until salmon easily flakes. Remove from grill, and serve with lemons on top. It pairs beautifully with a garlic aioli or green goddess tarter sauce.
